Description
Crispy toasted flour tortillas filled with roast beef, provolone, and fried onions, served with a rich homemade au jus for dipping.
Ingredients
- 4 large flour tortillas (12-inch)
- 8 slices provolone cheese
- 12 ounces deli roast beef, thinly sliced
- 1 cup French fried onions
- 2 tablespoons extra virgin olive oil
Au Jus
- 1 can (10.5 ounces) beef consommé
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- In a saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Simmer 5–7 minutes; keep warm.
- Lay tortillas flat. Add 2 slices provolone, 3 ounces roast beef, and fried onions to each.
- Roll tightly, folding sides slightly inward.
- Heat olive oil in a skillet over medium heat.
- Cook roll ups seam-side down, turning until golden and crisp on all sides (about 6–8 minutes).
- Rest briefly, slice, and serve warm with au jus.
Notes
- Do not overfill to keep rolls tight
- Reheat in oven or skillet to maintain crisp texture
- Add sautéed mushrooms or horseradish sauce for variation
