Description

Crispy toasted flour tortillas filled with roast beef, provolone, and fried onions, served with a rich homemade au jus for dipping.

Ingredients

  • 4 large flour tortillas (12-inch)
  • 8 slices provolone cheese
  • 12 ounces deli roast beef, thinly sliced
  • 1 cup French fried onions
  • 2 tablespoons extra virgin olive oil

Au Jus

  • 1 can (10.5 ounces) beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. In a saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Simmer 5–7 minutes; keep warm.
  2. Lay tortillas flat. Add 2 slices provolone, 3 ounces roast beef, and fried onions to each.
  3. Roll tightly, folding sides slightly inward.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook roll ups seam-side down, turning until golden and crisp on all sides (about 6–8 minutes).
  6. Rest briefly, slice, and serve warm with au jus.

Notes

  • Do not overfill to keep rolls tight
  • Reheat in oven or skillet to maintain crisp texture
  • Add sautéed mushrooms or horseradish sauce for variation
