This Crustless Broccoli, Bacon, and Cheddar Quiche is an easy, protein-packed breakfast or brunch recipe made with simple ingredients. No crust required—just mix, bake, and enjoy a fluffy, cheesy, veggie-filled quiche ready in under an hour.
Ingredients
- 4 eggs
- 1 1/2 cups whole milk
- 3/4 cup Bisquick or baking mix
- OR 3/4 cup flour + 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup grated parmesan cheese
- 16 oz steamed broccoli florets, chopped (about 2 cups)
- 8 oz shredded cheddar cheese (about 2 cups)
- Chopped bacon or ham (optional but recommended)
Instructions
- Preheat the Oven
Set oven to 350°F (175°C) and grease a 9-inch pie dish or baking dish. - Prepare Broccoli
Steam broccoli until tender-crisp and chop into bite-sized pieces. - Cook Bacon (If Using)
Cook until crisp, drain, and chop. - Mix Base Ingredients
In a large bowl, whisk eggs, milk, salt, and pepper. - Add Baking Mix
Whisk in Bisquick or the flour + baking powder alternative until smooth. - Fold in Remaining Ingredients
Add broccoli, parmesan, cheddar, and bacon/ham. Mix gently. - Bake
Pour mixture into the dish and bake 40–45 minutes, or until the center is set and top is lightly golden. - Cool & Serve
Let sit 10 minutes before slicing.
Notes
- Drain broccoli well to avoid excess moisture.
- For added flavor, sauté onions or garlic and add them to the mix.
- Make it lighter by using low-fat milk.
- Freeze slices individually for easy grab-and-go breakfasts.
- For a vegetarian version, simply omit bacon or ham.
