Ingredients
- 3 cups cold cooked jasmine rice
- 1 pound boneless skinless chicken breast, diced
- 2 tablespoons vegetable oil
- 2 large eggs
- 1 cup frozen peas and diced carrots
- 2 green onions, sliced
- 1/3 cup mayonnaise
- 1/4 cup Thai sweet chili sauce
- 1 tablespoon sriracha (more to taste)
- 1 tablespoon soy sauce
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 6-7 minutes. Set aside.
- In the same skillet, add the remaining oil and scramble the eggs until fully cooked.
- Add peas and carrots, then stir in cold rice and mix.
- Combine mayonnaise, sweet chili sauce, sriracha, and soy sauce. Pour over rice and stir to coat.
- Return chicken to the skillet, mix with green onions, and cook for 2 more minutes.
- Serve and enjoy!

- Use day-old rice for better texture and less mushiness.
