Description

A quick, easy, and delicious meal, Bang Bang Fried Rice combines juicy chicken, crispy rice, and a creamy sweet-spicy sauce. Perfect for busy weeknights or meal prep, it’s a dish your whole family will love.


Ingredients

  • 3 cups cold cooked jasmine rice
  • 1 pound boneless skinless chicken breast, diced
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup frozen peas and diced carrots
  • 2 green onions, sliced
  • 1/3 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1 tablespoon sriracha (more to taste)
  • 1 tablespoon soy sauce


Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 6-7 minutes. Set aside.
  2. In the same skillet, add the remaining oil and scramble the eggs until fully cooked.
  3. Add peas and carrots, then stir in cold rice and mix.
  4. Combine mayonnaise, sweet chili sauce, sriracha, and soy sauce. Pour over rice and stir to coat.
  5. Return chicken to the skillet, mix with green onions, and cook for 2 more minutes.
  6. Serve and enjoy!

Notes

  • Use day-old rice for better texture and less mushiness.
  • Adjust sriracha for spice level preferences.
