Ingredients

For the Muffins:

  • ½ cup butter, melted (1 stick)
  • 1 cup plain yogurt
  • 1 large egg
  • ½ cup brown sugar
  • ½ cup maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp kosher salt
  • 1 cup old-fashioned oats
  • 1 cup whole wheat flour
  • 1 apple, finely diced

Optional Topping:

  • ½ cup brown sugar
  • 2 tbsp maple syrup
  • ¼ cup old-fashioned oats
  • ¼ cup whole wheat flour
  • ½ tsp cinnamon
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
  2. In a large bowl, whisk melted butter, yogurt, egg, brown sugar, maple syrup, and vanilla.
  3. Stir in cinnamon, baking soda, baking powder, and salt. Add oats and flour, mixing until just combined.
  4. Fold in diced apple.
  5. In a separate bowl, mix topping ingredients (if using) until crumbly.
  6. Divide batter among muffin cups, filling ¾ full. Sprinkle with topping.
  7. Bake for 18–22 minutes, until a toothpick comes out clean.
  8. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes
