Description

A refreshing and healthy watermelon salad recipe with feta, cucumber, mint, and a zesty lime dressing. Perfect for summer BBQs, picnics, or light lunches.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup cucumber, thinly sliced
  • ½ small red onion, thinly sliced
  • ¾ cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, torn
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • Salt and freshly cracked black pepper to taste
  • Optional: balsamic glaze, toasted seeds, or olives for garnish

Instructions

  1. Prep the Watermelon: Cut the watermelon into bite-sized cubes and let it drain in a colander for 10 minutes to reduce excess water.
  2. Slice and Soak Onion: Thinly slice the red onion and soak it in cold water for 10 minutes to mellow the flavor.
  3. Combine Ingredients: In a large bowl, add watermelon, cucumber, drained onion, and torn mint leaves.
  4. Add Feta: Gently crumble the feta cheese over the top.
  5. Make the Dressing: In a small bowl or jar, whisk together lime juice, olive oil, salt, and pepper.
  6. Toss and Serve: Drizzle the dressing over the salad and toss gently. Garnish with optional toppings if desired. Serve chilled.

Notes

  • Use a seedless watermelon for convenience.
  • Chill all ingredients before assembling for maximum refreshment.
  • Don’t dress the salad too early—wait until just before serving to keep it crisp.
  • Add protein like grilled chicken or shrimp to turn it into a full meal.
  • For extra flair, serve on skewers or use a melon baller for round watermelon pieces.
