Description

Tender seared salmon fillets simmered in a creamy Parmesan garlic sauce with sun-dried tomatoes and spinach. A rich, flavorful, one-pan dinner that feels gourmet but comes together in under 30 minutes.


Ingredients

For the Salmon

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 salmon fillets
  • Salt and pepper, to taste

For the Cream Sauce

  • 2 cloves garlic, minced
  • 34 sun-dried tomatoes in oil, sliced
  • 125 ml (½ cup) dry white wine
  • 250 ml (1 cup) double/heavy cream
  • 50 g (½ cup) Parmesan cheese, grated
  • 30 g (1 cup) fresh spinach


Instructions

  1. Season the Salmon
    Pat salmon dry and season with salt and pepper.
  2. Sear
    Heat butter and olive oil in a pan. Sear salmon 4–5 minutes per side. Remove.
  3. Sauté Garlic & Tomatoes
    Add garlic and sun-dried tomatoes to the same pan. Cook 1 minute.
  4. Deglaze
    Pour in white wine and simmer until slightly reduced.
  5. Make the Sauce
    Add heavy cream and Parmesan. Stir until smooth and thickened.
  6. Add Spinach
    Stir in spinach until wilted.
  7. Finish
    Return salmon to the pan and spoon sauce over the top.
  8. Serve
    Enjoy warm with pasta, rice, or vegetables.

Notes

  • Use freshly grated Parmesan for the smoothest sauce.
  • Swap wine for chicken broth if preferred.
  • Add red pepper flakes for heat.
  • Don’t boil the sauce — keep at a gentle simmer to avoid splitting.
