Ingredients
- 2 cups cherry tomatoes, halved
- 1 large English cucumber, sliced and quartered
- 1 cup fresh mozzarella pearls (bocconcini or ciliegine)
- 1/4 cup fresh basil, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar or lemon juice
- 1/2 teaspoon dried oregano
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Add the halved cherry tomatoes and sliced cucumber to a large mixing bowl.
- Gently fold in the mozzarella pearls.
- Sprinkle the chopped basil and dried oregano over the salad.
- Drizzle with olive oil and balsamic vinegar (or lemon juice).
- Season with salt and black pepper to taste.
- Toss gently until everything is evenly combined.
- Let rest for 5 minutes before serving to allow flavors to meld.
