Description

A fresh and simple tomato cucumber mozzarella salad made with juicy tomatoes, crisp cucumber, creamy mozzarella, and basil, lightly dressed with olive oil and balsamic for a balanced, refreshing dish.


Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 large English cucumber, sliced and quartered
  • 1 cup fresh mozzarella pearls (bocconcini or ciliegine)
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 1/2 teaspoon dried oregano
  • Salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Add the halved cherry tomatoes and sliced cucumber to a large mixing bowl.
  2. Gently fold in the mozzarella pearls.
  3. Sprinkle the chopped basil and dried oregano over the salad.
  4. Drizzle with olive oil and balsamic vinegar (or lemon juice).
