Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 lb ground beef (or turkey/chicken)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional, for heat)
  • 1 (15 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • Salt & black pepper, to taste

Optional toppings: shredded cheese, sour cream, green onions, tortilla chips


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and garlic. Cook until softened.
  3. Stir in ground beef and cook until browned. Drain excess fat.
  4. Add chili powder, cumin, smoked paprika, and cayenne. Cook 1–2 minutes to release flavors.
  5. Mix in diced tomatoes, tomato paste, and beef broth. Stir well.
  6. Add beans and bring to a gentle boil.
  7. Reduce heat to low and let simmer for 30–40 minutes, stirring occasionally.
  8. Taste and adjust seasoning.
  9. Serve hot with desired toppings.

  • For deeper flavor, let the chili simmer longer (up to 1 hour).
