Description

A flavorful Balkan-style rice dish cooked with vegetables, paprika, and broth for a comforting, colorful meal.


Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth (or water)
  • 1 medium onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1 medium tomato, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Olive oil for sautéing
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish


Instructions

  1. Heat olive oil in a skillet and sauté the onion until soft.
  2. Add bell pepper, tomato, and garlic; cook for 2–3 minutes.
  3. Stir in rice, paprika, and oregano; mix well.
  4. Pour in vegetable broth, season with salt and pepper, and bring to a boil.
  5. Reduce heat, cover, and simmer for 15–18 minutes until rice is tender.
  6. Fluff with a fork and garnish with parsley if desired.
