Ingredients
- 1 cup long-grain rice
- 2 cups vegetable broth (or water)
- 1 medium onion, finely chopped
- 1 bell pepper (any color), diced
- 1 medium tomato, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Olive oil for sautéing
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Heat olive oil in a skillet and sauté the onion until soft.
- Add bell pepper, tomato, and garlic; cook for 2–3 minutes.
- Stir in rice, paprika, and oregano; mix well.
- Pour in vegetable broth, season with salt and pepper, and bring to a boil.
- Reduce heat, cover, and simmer for 15–18 minutes until rice is tender.
- Fluff with a fork and garnish with parsley if desired.
Notes
- Add frozen peas for extra color and nutrition.
- Use vegetable broth for deeper flavor.
- Let the rice rest covered for 5 minutes before serving for the best texture.
