This Taco Bell Mexican Pizza copycat delivers crispy tortillas layered with seasoned beef, creamy beans, rich enchilada sauce, and melty cheese. It’s a simple homemade version of the fast-food favorite that’s perfect for weeknight dinners or casual gatherings.
Ingredients
- 1 tablespoon oil (for frying, optional)
- 4 medium flour tortillas
- 1 cup refried beans
- 1/2 pound ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1/2 cup enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/3 cup diced tomatoes
- 2 tablespoons chopped red onion
- 2 tablespoons chopped green onions
Instructions
- Brown ground beef in a skillet over medium heat until fully cooked. Drain grease.
- Add taco seasoning and water. Simmer 3–4 minutes until thickened.
- Fry tortillas in oil 1–2 minutes per side until crisp, or bake at 400°F for 5–7 minutes.
- Warm refried beans until smooth.
- Spread beans on one tortilla, layer with seasoned beef, and top with a second tortilla.
- Spread enchilada sauce over the top tortilla and sprinkle evenly with both cheeses.
- Bake at 400°F for 8–10 minutes until cheese is melted and bubbly.
- Top with diced tomatoes and onions. Rest 2–3 minutes before slicing.

- Don’t oversaturate with sauce or the tortillas may soften.
