Description

A smooth, comforting soup made with sweet potatoes, apple, and warm spices, perfect for a nourishing lunch or cozy dinner.


Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 heaping teaspoon sea salt, plus more to taste
  • Freshly ground black pepper, to taste
  • 3 medium sweet potatoes (about pounds), peeled and cubed
  • 1 apple, peeled and chopped
  • 3 garlic cloves, grated
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • 1 teaspoon apple cider vinegar
  • 34 cups vegetable broth


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, salt, and black pepper; cook until soft and translucent, about 5–7 minutes.
  2. Add sweet potatoes and apple, stirring to coat. Cook for 3–4 minutes.
  3. Stir in garlic, ginger, coriander, and smoked paprika; cook until fragrant, about 30 seconds.
  4. Pour in 3 cups vegetable broth and bring to a gentle boil. Reduce heat and simmer for 20–25 minutes, until sweet potatoes are tender.
  5. Blend the soup until smooth using an immersion blender or countertop blender.
  6. Add apple cider vinegar and additional broth as needed to reach desired consistency. Adjust seasoning and serve warm.
