Description

Moist and flavorful pound cake made with mashed sweet potatoes, warm spices, and optional glaze for a comforting, seasonal dessert.


Ingredients

For the Cake:

  • 2 cups mashed sweet potatoes (about 23 medium sweet potatoes)
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves (optional)
  • 1/2 teaspoon salt
  • 1/2 cup whole milk or buttermilk

Optional Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 325°F (163°C) and grease/flour a loaf or bundt pan.
  2. Cream butter, granulated sugar, and brown sugar until fluffy. Add eggs, one at a time, then stir in vanilla and mashed sweet potatoes.
  3. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves (if using), and salt. Alternate adding dry ingredients and milk to the wet mixture, mixing gently until smooth.
  4. Pour batter into prepared pan and bake for 70–85 minutes, or until a toothpick inserted comes out clean.
  5. Let cake cool 10–15 minutes before removing from pan. For glaze, whisk powdered sugar, milk, and vanilla, then drizzle over cooled cake.

  • Use fully cooled mashed sweet potatoes for a smoother batter.
  • Do not overmix to avoid a dense cake.
