A cozy baked breakfast made with mashed sweet potatoes, cottage cheese, oats, cinnamon, and walnuts for a balanced, high-protein start to the day.
Ingredients
- 2 cups mashed sweet potatoes
- 1 cup cottage cheese
- 1/2 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped walnuts
- 1 tablespoon maple syrup (optional)
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
- In a mixing bowl, combine mashed sweet potatoes and cottage cheese until mostly smooth.
- Stir in oats, cinnamon, vanilla extract, salt, and maple syrup if using.
- Fold in half of the walnuts.
- Spread mixture evenly into prepared baking dish and sprinkle remaining walnuts on top.
- Bake for 30–35 minutes, or until center is set and edges are lightly golden.
- Cool slightly before slicing and serving.
Notes
- Blend cottage cheese first for a smoother texture
- Add dried cranberries or raisins for extra sweetness
- Use certified gluten-free oats if needed
- Reheat with a splash of milk for added moisture
