Description

A cozy baked breakfast made with mashed sweet potatoes, cottage cheese, oats, cinnamon, and walnuts for a balanced, high-protein start to the day.


Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts
  • 1 tablespoon maple syrup (optional)
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine mashed sweet potatoes and cottage cheese until mostly smooth.
  3. Stir in oats, cinnamon, vanilla extract, salt, and maple syrup if using.
  4. Fold in half of the walnuts.
  5. Spread mixture evenly into prepared baking dish and sprinkle remaining walnuts on top.
  6. Bake for 30–35 minutes, or until center is set and edges are lightly golden.
  7. Cool slightly before slicing and serving.
