Ingredients

Blondies:

  • 1 cup unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 large egg
  • 1/4 cup fresh squeezed lemon juice
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup diced fresh strawberries

Glaze:

  • 1 cup powdered sugar (sifted)
  • 1 tablespoon strawberry puree
  • 1 tablespoon lemon juice (adjust as needed)


Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking pan.
  2. Cream butter and sugar until light and fluffy.
  3. Mix in egg and lemon juice until combined.
  4. In another bowl, whisk flour, baking powder, and salt.
  5. Gradually mix dry ingredients into wet mixture.
  6. Fold in diced strawberries gently.
  7. Spread batter evenly into pan and bake for 30–35 minutes.
  8. Let blondies cool completely.
  9. Mix glaze ingredients and spread over cooled bars.
  10. Slice and serve.
