Description

Creamy, fluffy homemade egg bites inspired by the Starbucks favorite, made with eggs, cottage cheese, Gruyere, and bacon for a protein-packed, silky breakfast.


Ingredients

  • Cooking spray
  • 4 slices bacon or turkey bacon, diced
  • 8 large eggs, whisked
  • 1 cup cottage cheese
  • 1 cup shredded Gruyere cheese
  • 1 tbsp cornstarch
  • ¼ tsp salt


Instructions

  1. Preheat oven to 300°F (150°C) and spray a muffin tin or silicone egg mold.
  2. Cook diced bacon until crisp; set aside.
  3. Blend eggs, cottage cheese, Gruyere, cornstarch, and salt until smooth.
  4. Divide bacon among the molds and pour the egg mixture over the top.
  5. (Optional) Place the muffin tin in a larger pan and add hot water halfway up the sides.
  6. Bake for 28–32 minutes, until centers are just set.
  7. Cool for 5 minutes before removing and serve warm.

Notes

  • Use silicone molds for the easiest release.
  • For extra creaminess, do not overbake.
  • Add veggies, sausage, or different cheeses for variations.
  • Reheat gently in the microwave for 25–35 seconds.
