Creamy, fluffy homemade egg bites inspired by the Starbucks favorite, made with eggs, cottage cheese, Gruyere, and bacon for a protein-packed, silky breakfast.
Ingredients
- Cooking spray
- 4 slices bacon or turkey bacon, diced
- 8 large eggs, whisked
- 1 cup cottage cheese
- 1 cup shredded Gruyere cheese
- 1 tbsp cornstarch
- ¼ tsp salt
Instructions
- Preheat oven to 300°F (150°C) and spray a muffin tin or silicone egg mold.
- Cook diced bacon until crisp; set aside.
- Blend eggs, cottage cheese, Gruyere, cornstarch, and salt until smooth.
- Divide bacon among the molds and pour the egg mixture over the top.
- (Optional) Place the muffin tin in a larger pan and add hot water halfway up the sides.
- Bake for 28–32 minutes, until centers are just set.
- Cool for 5 minutes before removing and serve warm.
Notes
- Use silicone molds for the easiest release.
- For extra creaminess, do not overbake.
- Add veggies, sausage, or different cheeses for variations.
- Reheat gently in the microwave for 25–35 seconds.
