Description
Juicy chicken breasts filled with a creamy spinach and ricotta mixture, baked in marinara sauce and topped with Parmesan cheese.
Ingredients
- 1 ½ lb chicken breast (3–4 pieces)
- ½ tsp cracked pepper
- ½ tsp sea salt
- 3 garlic cloves, minced (divided)
- 1 cup ricotta cheese
- 1 cup fresh chopped spinach
- ½ cup Parmesan cheese, shredded
- 1 tsp Italian seasoning
- ¼ tsp crushed red pepper
- 1 ½ cups marinara sauce
- Extra Parmesan (¼–⅓ cup for topping)
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Mix ricotta, spinach, half the garlic, Parmesan, and seasonings.
- Cut pockets into chicken or layer filling on top.
- Fill chicken with ricotta mixture.
- Spread marinara in baking dish and place chicken on top.
- Add remaining sauce and sprinkle extra Parmesan.
- Bake 25–30 minutes until chicken is cooked through.
- Let rest briefly before serving.
Notes
- Drain excess moisture from spinach to avoid watery filling.
- Use freshly grated Parmesan for better flavor.
- Add mozzarella on top for extra cheesiness.
