Description

Juicy chicken breasts filled with a creamy spinach and ricotta mixture, baked in marinara sauce and topped with Parmesan cheese.


Ingredients

  • 1 ½ lb chicken breast (34 pieces)
  • ½ tsp cracked pepper
  • ½ tsp sea salt
  • 3 garlic cloves, minced (divided)
  • 1 cup ricotta cheese
  • 1 cup fresh chopped spinach
  • ½ cup Parmesan cheese, shredded
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • 1 ½ cups marinara sauce
  • Extra Parmesan (¼–⅓ cup for topping)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Mix ricotta, spinach, half the garlic, Parmesan, and seasonings.
  4. Cut pockets into chicken or layer filling on top.
  5. Fill chicken with ricotta mixture.
  6. Spread marinara in baking dish and place chicken on top.
  7. Add remaining sauce and sprinkle extra Parmesan.
  8. Bake 25–30 minutes until chicken is cooked through.
  9. Let rest briefly before serving.

Notes

  • Drain excess moisture from spinach to avoid watery filling.
  • Use freshly grated Parmesan for better flavor.
  • Add mozzarella on top for extra cheesiness.
