Description
A moist apple cake flavored with cinnamon and nutmeg, finished with a lightly reduced apple cider and honey glaze for a warm, seasonal dessert.
Ingredients
- 2–2½ cups finely diced apples (from about 3 large apples), peeled and cored
- 2 teaspoons ground cinnamon, divided
- 1 teaspoon ground nutmeg
- 1 cup brown sugar, divided (2 tbsp + 2 tbsp + ¾ cup)
- 1 cup apple cider
- 2 tablespoons honey
- ½ cup extra-virgin olive oil, plus more for greasing
- ½ cup full-fat Greek yogurt
- 3 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon fine-grain salt
- 2 cups all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round or 8×8-inch pan.
- Toss apples with 2 tbsp brown sugar and 1 tsp cinnamon; set aside.
- Whisk remaining ¾ cup brown sugar, olive oil, and yogurt until smooth. Add eggs.
- Stir in remaining cinnamon, nutmeg, baking powder, baking soda, and salt.
- Fold in flour, then gently fold in apples.
- Bake 40–45 minutes until a toothpick comes out clean. Cool slightly.
- Simmer cider, honey, and remaining 2 tbsp brown sugar for 10–12 minutes until reduced.
- Spoon glaze over cooled cake before slicing.
Notes
- Let cake rest before glazing to help absorb flavor.
- Add chopped nuts for extra texture if desired.
