Ingredients
- 12 oz egg noodles
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes (optional)
- 1 cup sour cream
- 1 cup cottage cheese
- 2 cups shredded cheddar cheese (divided)
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons olive oil or butter
- Fresh parsley, chopped (for garnish)
Instructions
Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Cook Noodles: Boil egg noodles according to package instructions until al dente. Drain and set aside.
Brown the Beef: In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Stir in diced onions and garlic, cooking for 2–3 minutes until fragrant.
Add the Sauce: Pour in tomato sauce (and diced tomatoes, if using). Add Italian seasoning, salt, pepper, and paprika. Simmer for 5 minutes.
Make the Creamy Layer: In a large bowl, mix sour cream and cottage cheese. Stir in the cooked noodles until well coated.
Assemble the Bake:
- Spread half of the noodle mixture into the prepared baking dish.
- Top with half of the meat sauce.
- Repeat layers, finishing with shredded cheddar cheese on top.
Bake: Bake uncovered for 25–30 minutes, or until bubbly and golden brown.
Serve: Let cool slightly, garnish with parsley, and serve warm.
Notes
- Don’t overcook the noodles: They’ll continue cooking in the oven, so keep them slightly firm.
- Make ahead: Assemble the dish a day early, cover, and refrigerate. Bake when ready to serve.
- Customize the cheese: Try mozzarella, Colby Jack, or Monterey Jack for a creamier texture.
- Freeze-friendly: This casserole freezes beautifully — perfect for meal prep.
- Add veggies: Mix in spinach, mushrooms, or zucchini for extra nutrients.
