Description

This Sour Cream Noodle Bake is the ultimate comfort food — creamy, cheesy, and loaded with savory beef and noodles. A simple, family-friendly casserole that’s perfect for weeknight dinners or make-ahead meals!

Ingredients

  • 12 oz egg noodles
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes (optional)
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil or butter
  • Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Cook Noodles: Boil egg noodles according to package instructions until al dente. Drain and set aside.

Brown the Beef: In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Stir in diced onions and garlic, cooking for 2–3 minutes until fragrant.

Add the Sauce: Pour in tomato sauce (and diced tomatoes, if using). Add Italian seasoning, salt, pepper, and paprika. Simmer for 5 minutes.

Make the Creamy Layer: In a large bowl, mix sour cream and cottage cheese. Stir in the cooked noodles until well coated.

Assemble the Bake:

  • Spread half of the noodle mixture into the prepared baking dish.
  • Top with half of the meat sauce.
  • Repeat layers, finishing with shredded cheddar cheese on top.

Bake: Bake uncovered for 25–30 minutes, or until bubbly and golden brown.

Serve: Let cool slightly, garnish with parsley, and serve warm.

Notes

  • Don’t overcook the noodles: They’ll continue cooking in the oven, so keep them slightly firm.
  • Make ahead: Assemble the dish a day early, cover, and refrigerate. Bake when ready to serve.
  • Customize the cheese: Try mozzarella, Colby Jack, or Monterey Jack for a creamier texture.
  • Freeze-friendly: This casserole freezes beautifully — perfect for meal prep.
  • Add veggies: Mix in spinach, mushrooms, or zucchini for extra nutrients.
