Description

Golden seared sea scallops finished with a fresh citrus ginger butter sauce for a quick and elegant seafood meal.


Ingredients

  • 2 tablespoons avocado oil
  • 1 1/2 pounds sea scallops
  • 1 orange, zested and juiced
  • 1 lemon, juiced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons butter or ghee
  • Sea salt, to taste
  • Fresh thyme, for garnish


Instructions

  1. Pat scallops dry with paper towels and lightly season with sea salt.
  2. Heat avocado oil in a large skillet over medium-high heat.
  3. Place scallops in the skillet, leaving space between each one.
  4. Cook 2–3 minutes without moving until a golden crust forms.
  5. Flip scallops and cook another 1–2 minutes until just opaque. Remove and set aside.
  6. Reduce heat slightly and add butter or ghee to the same skillet.
  7. Stir in grated ginger, orange zest, orange juice, and lemon juice.
  8. Simmer 1–2 minutes until the sauce slightly reduces.
  9. Return scallops to the pan and spoon sauce over them.
  10. Cook 30 seconds to coat the scallops.
  11. Garnish with fresh thyme and serve warm.

Notes

  • Pat scallops completely dry to help them sear instead of steam.
  • Avoid overcrowding the pan so scallops develop a golden crust.
  • Serve immediately for the best texture and flavor.
