Ingredients
- 2 tablespoons avocado oil
- 1 1/2 pounds sea scallops
- 1 orange, zested and juiced
- 1 lemon, juiced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons butter or ghee
- Sea salt, to taste

Instructions

- Reduce heat slightly and add butter or ghee to the same skillet.
- Stir in grated ginger, orange zest, orange juice, and lemon juice.
- Simmer 1–2 minutes until the sauce slightly reduces.
- Return scallops to the pan and spoon sauce over them.
- Cook 30 seconds to coat the scallops.
- Garnish with fresh thyme and serve warm.
Notes
- Pat scallops completely dry to help them sear instead of steam.
