Description

Soft and moist banana muffins made with ricotta cheese and bright citrus flavors, perfect for breakfast or a light snack.


Ingredients

  • 2 large ripe bananas, mashed
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons turbinado sugar (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin.
  2. In a bowl, mix bananas, ricotta, eggs, oil, milk, and vanilla.
  3. Stir in citrus zest and juices.
  4. In another bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  5. Combine wet and dry ingredients gently.
  6. Fill muffin cups about 3/4 full.
  7. Sprinkle with turbinado sugar if desired.
  8. Bake for 18–22 minutes until set.

Notes

  • Use very ripe bananas for best sweetness and texture.
  • Do not overmix to keep muffins soft.
  • Add nuts or chocolate chips for variation.
