Description
This Quick Tomato Garlic Pasta features fresh tomatoes simmered with garlic and olive oil, tossed with tender angel hair pasta and finished with basil and Parmesan. It’s a light, flavorful dinner ready in under 30 minutes.
Ingredients
- 2 pounds tomatoes, chopped
- 1 (8-ounce) package angel hair pasta
- 1 tablespoon olive oil
- 4 cloves garlic, crushed
- 1 tablespoon tomato paste
- Salt, to taste
- Ground black pepper, to taste
- 1 tablespoon chopped fresh basil
- ¼ cup grated Parmesan cheese
Instructions
- Cook angel hair pasta in salted boiling water (3–4 minutes). Reserve ½ cup pasta water, then drain.
- Sauté garlic in olive oil over medium heat until fragrant.
- Add tomatoes and cook 8–10 minutes until softened.
- Stir in tomato paste; cook 2–3 minutes.
- Season with salt and pepper.
- Toss pasta with sauce, adding reserved pasta water as needed.
- Stir in basil and sprinkle with Parmesan before serving.

- Avoid browning the garlic to prevent bitterness.
- Simmer tomatoes long enough to concentrate flavor.
- Use pasta water to adjust consistency rather than plain water.
