Description

This Quick Tomato Garlic Pasta features fresh tomatoes simmered with garlic and olive oil, tossed with tender angel hair pasta and finished with basil and Parmesan. It’s a light, flavorful dinner ready in under 30 minutes.


Ingredients

  • 2 pounds tomatoes, chopped
  • 1 (8-ounce) package angel hair pasta
  • 1 tablespoon olive oil
  • 4 cloves garlic, crushed
  • 1 tablespoon tomato paste
  • Salt, to taste
  • Ground black pepper, to taste
  • 1 tablespoon chopped fresh basil
  • ¼ cup grated Parmesan cheese


Instructions

  1. Cook angel hair pasta in salted boiling water (3–4 minutes). Reserve ½ cup pasta water, then drain.
  2. Sauté garlic in olive oil over medium heat until fragrant.
  3. Add tomatoes and cook 8–10 minutes until softened.
  4. Stir in tomato paste; cook 2–3 minutes.
  5. Season with salt and pepper.
  6. Toss pasta with sauce, adding reserved pasta water as needed.
  7. Stir in basil and sprinkle with Parmesan before serving.

Notes

  • Avoid browning the garlic to prevent bitterness.
  • Simmer tomatoes long enough to concentrate flavor.
  • Use pasta water to adjust consistency rather than plain water.
