Juicy chicken tacos cooked in a flavorful homemade taco sauce and served with fresh toppings for an easy weeknight meal.
Ingredients
For the Chicken
- 700 g / 1.2 lb chicken thighs or chicken breast
- 1.5 tbsp olive oil
- 2 tbsp tomato paste
- 2 tsp sugar
- 1 cup (250 ml) chicken broth, divided
Homemade Taco Seasoning
- 3 tbsp lime juice
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp dried oregano
- 3 tsp cumin powder
- 3 tsp paprika
- ½ tsp cayenne pepper
- 1 tsp salt
- ½ tsp black pepper
For Serving
- Taco shells or tortillas
- Diced tomato
- Diced onion
- Avocado
- Fresh cilantro
- Shredded lettuce
- Shredded cheese
- Sour cream
Instructions
- Cut chicken into bite-sized pieces.
- In a bowl, combine lime juice, olive oil, garlic, and all taco seasoning ingredients.
- Toss chicken in the seasoning mixture until coated.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 5–7 minutes until browned.
- Stir in tomato paste and cook for 1 minute.
- Add half the chicken broth and simmer until sauce thickens.
- Add remaining broth if needed for a saucier texture.
- Warm tortillas or taco shells.
- Fill tacos with chicken and desired toppings.
- Serve warm.
