Description

Juicy chicken tacos cooked in a flavorful homemade taco sauce and served with fresh toppings for an easy weeknight meal.


Ingredients

For the Chicken

  • 700 g / 1.2 lb chicken thighs or chicken breast
  • 1.5 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tsp sugar
  • 1 cup (250 ml) chicken broth, divided

Homemade Taco Seasoning

  • 3 tbsp lime juice
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 3 tsp cumin powder
  • 3 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • ½ tsp black pepper

For Serving

  • Taco shells or tortillas
  • Diced tomato
  • Diced onion
  • Avocado
  • Fresh cilantro
  • Shredded lettuce
  • Shredded cheese
  • Sour cream


Instructions

  1. Cut chicken into bite-sized pieces.
  2. In a bowl, combine lime juice, olive oil, garlic, and all taco seasoning ingredients.
  3. Toss chicken in the seasoning mixture until coated.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Cook chicken for 5–7 minutes until browned.
  6. Stir in tomato paste and cook for 1 minute.
  7. Add half the chicken broth and simmer until sauce thickens.
  8. Add remaining broth if needed for a saucier texture.
  9. Warm tortillas or taco shells.
  10. Fill tacos with chicken and desired toppings.
  11. Serve warm.
