Description
Queso Cauliflower Bake is a creamy, cheesy cauliflower casserole inspired by classic queso flavors. Made with white cheddar, mozzarella, and green chiles, it’s an easy oven-baked dish perfect as a side or vegetarian main.
Ingredients
- 2 heads cauliflower, roughly chopped
- 2 cups shredded white cheddar cheese, divided
- 1 cup mozzarella cheese, shredded
- 1 (8 oz) package cream cheese, softened
- 1 (12 oz) can evaporated milk
- 2 (4 oz) cans diced green chiles, drained
- 3 teaspoons taco seasoning
- 1 teaspoon salt
- ½ teaspoon garlic powder
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Bring a large pot of salted water to a boil. Add cauliflower and cook 5–7 minutes until fork-tender. Drain well and set aside.
- In a saucepan over medium heat, combine cream cheese and evaporated milk, stirring until smooth.
- Add 1½ cups white cheddar and all mozzarella. Stir until melted.
- Mix in green chiles, taco seasoning, salt, and garlic powder.
- Fold cauliflower into the cheese sauce and transfer to baking dish.
- Sprinkle remaining ½ cup white cheddar on top.
- Bake uncovered for 25–30 minutes until bubbly and lightly golden.
- Garnish with fresh cilantro before serving.
Notes
- Drain cauliflower thoroughly to avoid excess moisture.
- Roast cauliflower instead of boiling for deeper flavor.
- Add jalapeños or pepper jack cheese for extra heat.
- Serve as a side, vegetarian main, or dip with tortilla chips.
