Description

Whip up these soft and flavorful 2-ingredient pumpkin spice cookies in just 30 minutes! A quick and easy fall dessert made with spice cake mix and pumpkin puree.


Ingredients

  • 1 (15.25-ounce) package spice cake mix
  • 1 (15-ounce) can solid pack pumpkin

Optional Add-ins:

  • ½ cup chocolate chips
  • ½ cup chopped nuts (walnuts or pecans)
  • 1 teaspoon pumpkin pie spice (for extra flavor)


Instructions

  1. Preheat oven to 350°F (175°C). Line or grease cookie sheets.
  2. In a large bowl, mix together spice cake mix and pumpkin puree until smooth.
  3. Drop rounded spoonfuls of dough onto prepared baking sheets.
  4. Bake for 18–20 minutes, or until centers are set.
  5. Cool for 5 minutes on the sheet, then transfer to a wire rack to cool completely.
