Description

A creamy and cheesy hash brown casserole made with pimento cheese, perfect as a comforting side or main dish.


Ingredients

  • 20 oz frozen shredded hash brown potatoes
  • 2 tbsp butter, melted
  • 1.52 cups jalapeño pimento cheese
  • 8 oz sour cream
  • 1/2 cup chicken broth
  • 34 green onions, chopped
  • 1/2 tsp salt
  • 1/2 tsp coarse ground black pepper
  • 1/2 cup grated sharp cheddar cheese (optional topping)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix hash browns, butter, pimento cheese, sour cream, broth, green onions, salt, and pepper.
  3. Spread mixture evenly in the dish.
  4. Sprinkle cheddar cheese on top if using.
  5. Bake 40–45 minutes until hot and golden on top.
  6. Let rest a few minutes before serving.

Notes

  • Thaw hash browns slightly for easier mixing.
  • Add cooked bacon for extra flavor.
  • Bake uncovered for a crispier top layer.
