Description

Soft, chewy, and full of nutty flavor—these homemade peanut butter cookies are quick, easy, and perfect for any occasion.


Ingredients

  • 1 cup peanut butter (smooth or crunchy)
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk flour, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture and mix until dough forms.
  6. Roll dough into 1-tbsp-sized balls and place on the baking sheet.
  7. Press each cookie with a fork to make a crisscross pattern.
  8. Bake for 9–11 minutes, until edges are golden.
  9. Let cool on the sheet for 2–3 minutes, then transfer to a wire rack.

Notes

  • Use creamy peanut butter for a smoother texture or crunchy for extra bite.
  • Don’t overbake! Cookies should look slightly soft in the center when you pull them out.
  • For extra chewy cookies, use more brown sugar than white sugar.
  • Add chocolate chips, chopped nuts, or sea salt for a flavor twist.
  • Chill dough for 30 minutes if baking in a warm kitchen to prevent spreading.
