Soft, chewy, and full of nutty flavor—these homemade peanut butter cookies are quick, easy, and perfect for any occasion.
Ingredients
- 1 cup peanut butter (smooth or crunchy)
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 ¼ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk flour, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet mixture and mix until dough forms.
- Roll dough into 1-tbsp-sized balls and place on the baking sheet.
- Press each cookie with a fork to make a crisscross pattern.
- Bake for 9–11 minutes, until edges are golden.
- Let cool on the sheet for 2–3 minutes, then transfer to a wire rack.
Notes
- Use creamy peanut butter for a smoother texture or crunchy for extra bite.
- Don’t overbake! Cookies should look slightly soft in the center when you pull them out.
- For extra chewy cookies, use more brown sugar than white sugar.
- Add chocolate chips, chopped nuts, or sea salt for a flavor twist.
- Chill dough for 30 minutes if baking in a warm kitchen to prevent spreading.
