Description
A rich and creamy one-pot dish with tender chicken, perfectly cooked rice, and a cheesy Parmesan sauce. Quick, easy, and delicious!
Ingredients
- 1.5 pounds chicken breasts, cut into 1-inch pieces
- 4 tablespoons butter
- 1 large onion, diced
- 3 cloves garlic, minced (or 3 teaspoons)
- 2 teaspoons Italian seasoning
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 2 1/2 cups chicken broth
- 1 cup long grain white rice
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Parsley for serving (optional)
Instructions
- In a large pot, melt butter over medium heat. Add chicken pieces and cook until browned, about 6-8 minutes. Remove and set aside.
- In the same pot, sauté onion until soft, about 2-3 minutes. Add garlic and cook for 1-2 minutes until fragrant.
- Stir in Italian seasoning, rice, salt, and pepper.
- Add chicken broth, bring to a simmer, cover, and cook for 18-20 minutes until rice is tender and liquid is absorbed.
- Stir in heavy cream and Parmesan cheese. Return chicken to the pot, mix everything together, and let it simmer for a few more minutes.
- Garnish with parsley and serve hot!
Notes
- For extra veggies, add spinach, peas, or mushrooms along with the rice.
- Use any kind of cheese you prefer to customize the flavor.
- Store leftovers in an airtight container for up to 3 days.
