Description

A rich and creamy one-pot dish with tender chicken, perfectly cooked rice, and a cheesy Parmesan sauce. Quick, easy, and delicious!


Ingredients

  • 1.5 pounds chicken breasts, cut into 1-inch pieces
  • 4 tablespoons butter
  • 1 large onion, diced
  • 3 cloves garlic, minced (or 3 teaspoons)
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 2 1/2 cups chicken broth
  • 1 cup long grain white rice
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Parsley for serving (optional)


Instructions

  1. In a large pot, melt butter over medium heat. Add chicken pieces and cook until browned, about 6-8 minutes. Remove and set aside.
  2. In the same pot, sauté onion until soft, about 2-3 minutes. Add garlic and cook for 1-2 minutes until fragrant.
  3. Stir in Italian seasoning, rice, salt, and pepper.
  4. Add chicken broth, bring to a simmer, cover, and cook for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Stir in heavy cream and Parmesan cheese. Return chicken to the pot, mix everything together, and let it simmer for a few more minutes.
  6. Garnish with parsley and serve hot!

Notes

  • For extra veggies, add spinach, peas, or mushrooms along with the rice.
  • Use any kind of cheese you prefer to customize the flavor.
  • Store leftovers in an airtight container for up to 3 days.
