Description
Tender cod fillets are baked with a creamy Parmesan and herb topping for an easy, flavorful seafood dinner that comes together quickly and pairs well with simple sides.
Ingredients
- 2 lb cod fillets
- ⅓ cup mayonnaise
- ⅓ cup Parmigiano Reggiano cheese, freshly grated
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 2 cloves garlic, grated
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Pat cod fillets dry and season lightly with salt and black pepper. Arrange in the baking dish.
- In a bowl, mix mayonnaise, Parmesan cheese, parsley, basil, and grated garlic until smooth.
- Spread the mixture evenly over the top of each cod fillet.
- Bake uncovered for 18–22 minutes, until the fish flakes easily with a fork.
- Optional: Broil for 1–2 minutes at the end for a lightly golden top.
- Rest for a few minutes before serving.
Notes
- Use fillets of similar thickness for even cooking.
- Freshly grated Parmesan melts better than pre-shredded cheese.
- Add lemon zest or a squeeze of lemon juice before serving for brightness.
- Avoid overbaking to keep the cod moist and tender.
