Description

Tender cod fillets are baked with a creamy Parmesan and herb topping for an easy, flavorful seafood dinner that comes together quickly and pairs well with simple sides.


Ingredients

  • 2 lb cod fillets
  • ⅓ cup mayonnaise
  • ⅓ cup Parmigiano Reggiano cheese, freshly grated
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 2 cloves garlic, grated
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Pat cod fillets dry and season lightly with salt and black pepper. Arrange in the baking dish.
  3. In a bowl, mix mayonnaise, Parmesan cheese, parsley, basil, and grated garlic until smooth.
  4. Spread the mixture evenly over the top of each cod fillet.
  5. Bake uncovered for 18–22 minutes, until the fish flakes easily with a fork.
  6. Optional: Broil for 1–2 minutes at the end for a lightly golden top.
  7. Rest for a few minutes before serving.

Notes

  • Use fillets of similar thickness for even cooking.
  • Freshly grated Parmesan melts better than pre-shredded cheese.
  • Add lemon zest or a squeeze of lemon juice before serving for brightness.
  • Avoid overbaking to keep the cod moist and tender.
