Description

Creamy Cajun chicken orzo cooked in one pot with Parmesan, garlic, and bell peppers for an easy, comforting dinner.


Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp olive oil
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup diced bell pepper (optional)
  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and Cajun seasoning. Cook until browned and cooked through (about 5–7 minutes). Remove and set aside.
  2. In the same pot, sauté onions and bell peppers for 3–4 minutes. Add garlic and cook 30 seconds.
  3. Stir in orzo and pour in chicken broth. Bring to a boil, then reduce heat and simmer 10–12 minutes, stirring occasionally.
  4. When orzo is tender and most liquid is absorbed, stir in heavy cream and Parmesan cheese.
  5. Return chicken to the pot and simmer 2–3 minutes until creamy. Season with salt and pepper to taste.
  6. Garnish with parsley and serve warm.

Notes

  • Stir occasionally to prevent sticking
  • Add spinach or mushrooms for extra vegetables
