Description
Creamy Cajun chicken orzo cooked in one pot with Parmesan, garlic, and bell peppers for an easy, comforting dinner.
Ingredients
- 1 lb boneless skinless chicken breasts, diced
- 1 tbsp Cajun seasoning (adjust to taste)
- 1 tbsp olive oil
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup diced bell pepper (optional)
- 1.5 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and Cajun seasoning. Cook until browned and cooked through (about 5–7 minutes). Remove and set aside.
- In the same pot, sauté onions and bell peppers for 3–4 minutes. Add garlic and cook 30 seconds.
- Stir in orzo and pour in chicken broth. Bring to a boil, then reduce heat and simmer 10–12 minutes, stirring occasionally.
- When orzo is tender and most liquid is absorbed, stir in heavy cream and Parmesan cheese.
- Return chicken to the pot and simmer 2–3 minutes until creamy. Season with salt and pepper to taste.
- Garnish with parsley and serve warm.
Notes
- Stir occasionally to prevent sticking
- Add spinach or mushrooms for extra vegetables
- Adjust Cajun seasoning for preferred spice level
- Add a splash of broth when reheating to keep it creamy
