Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 8 oz (225 g) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup Key lime juice (fresh or bottled)
  • 1 tbsp lime zest
  • 1 ½ cups whipped topping or whipped cream
  • (Optional garnish): extra lime zest, crushed graham crackers, or lime slices


Instructions

  1. Make the Crust:
    In a medium bowl, mix graham cracker crumbs with melted butter until combined. Press the mixture firmly into the bottom of an 8×8-inch baking dish lined with parchment paper. Chill in the refrigerator for 15 minutes.
  2. Prepare the Filling:
    In a large bowl, beat the cream cheese until smooth. Add sweetened condensed milk, Key lime juice, and lime zest. Mix until creamy and well-blended.
  3. Fold in Whipped Topping:
    Gently fold in the whipped topping until the filling becomes light and fluffy.
  4. Assemble the Bars:
    Spread the filling evenly over the chilled crust. Smooth the top with a spatula and refrigerate for at least 4 hours, or overnight, until fully set.
