Description

Ingredients

  • 4 oz cream cheese, softened
  • ½ cup powdered sugar
  • ¼ cup unsweetened coconut cream
  • ½ tsp coconut extract
  • 4 cups sweetened shredded coconut, divided
  • 1 cup finely ground almond flour
  • 10 oz vanilla almond bark, melted


Instructions

  1. Beat softened cream cheese with powdered sugar until smooth.
  2. Add coconut cream and extract, then mix in 2 cups of shredded coconut and almond flour.
  3. Chill for 30–45 minutes.
  4. Roll into balls, dip in melted almond bark, and coat with remaining shredded coconut.
  5. Let set at room temp or in fridge.
