Ingredients

- ½ cup powdered sugar
- ¼ cup unsweetened coconut cream
- ½ tsp coconut extract
- 4 cups sweetened shredded coconut, divided
- 1 cup finely ground almond flour
- 10 oz vanilla almond bark, melted
Instructions
- Beat softened cream cheese with powdered sugar until smooth.
- Add coconut cream and extract, then mix in 2 cups of shredded coconut and almond flour.
- Chill for 30–45 minutes.
- Roll into balls, dip in melted almond bark, and coat with remaining shredded coconut.
- Let set at room temp or in fridge.
