A classic Neiman Marcus Chicken Casserole made with shredded chicken, a creamy base, and a golden cracker topping. Easy to prepare and ideal for weeknight dinners or gatherings.
Ingredients
Casserole Base
- 4 cups cooked and shredded chicken (rotisserie chicken works well)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup shredded cheddar cheese (for topping)
- 2 cups mixed vegetables (optional)
- 1 small onion, finely chopped
- Salt and black pepper, to taste
Topping
- 1 cup crushed buttery crackers (such as Ritz)
- ½ cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, 1 cup cheddar cheese, onion, vegetables, salt, and pepper until well combined.
- Spread the mixture evenly into the prepared baking dish.
- Combine crushed crackers with melted butter and sprinkle evenly over the casserole.
- Top with the remaining ½ cup shredded cheddar cheese.
- Bake for 30–35 minutes, until the casserole is bubbly and the top is golden brown.
- Let rest for 5–10 minutes before serving.
Notes
- Use rotisserie chicken to save time and boost flavor.
- Add broccoli, peas, or carrots for extra texture and color.
- If the topping browns too quickly, loosely cover with foil near the end of baking.
