Description

A classic Neiman Marcus Chicken Casserole made with shredded chicken, a creamy base, and a golden cracker topping. Easy to prepare and ideal for weeknight dinners or gatherings.


Ingredients

Casserole Base

  • 4 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded cheddar cheese (for topping)
  • 2 cups mixed vegetables (optional)
  • 1 small onion, finely chopped
  • Salt and black pepper, to taste

Topping

  • 1 cup crushed buttery crackers (such as Ritz)
  • ½ cup unsalted butter, melted


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, 1 cup cheddar cheese, onion, vegetables, salt, and pepper until well combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Combine crushed crackers with melted butter and sprinkle evenly over the casserole.
  5. Top with the remaining ½ cup shredded cheddar cheese.
  6. Bake for 30–35 minutes, until the casserole is bubbly and the top is golden brown.
  7. Let rest for 5–10 minutes before serving.

Notes

  • Use rotisserie chicken to save time and boost flavor.
  • Add broccoli, peas, or carrots for extra texture and color.
  • If the topping browns too quickly, loosely cover with foil near the end of baking.
