Description

Tender, flavorful Mississippi Pot Roast made with just 5 ingredients! This easy slow cooker recipe is savory, tangy, and perfect for family dinners.

Ingredients

  • 34 lb beef chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • ½ cup (1 stick) unsalted butter
  • 56 whole pepperoncini peppers + 2 tbsp juice

Optional Add-Ins:

  • 1 onion, sliced
  • 23 garlic cloves, minced
  • 34 carrots or potatoes for a one-pot meal

Instructions

  1. Pat chuck roast dry with paper towels. (Optional: Sear on all sides in a hot skillet for extra flavor.)
  2. Place roast in the slow cooker. Sprinkle ranch seasoning and au jus gravy mix on top.
  3. Add butter and pepperoncini peppers (plus juice).
  4. Cover and cook on low for 8 hours or high for 4–5 hours, until the roast is tender and shreds easily.
  5. Shred beef with two forks, mix with juices, and serve hot.

Notes

  • For extra flavor, always sear the roast before slow cooking.
  • Use pepperoncini juice sparingly if you prefer a milder tang.
  • Add root vegetables (like carrots and potatoes) directly into the slow cooker for a complete meal.
  • Leftovers taste even better the next day—perfect for sandwiches or tacos.
  • Freeze in portions with juices for quick, reheatable meals.
