Ingredients

For the Crust:

  • 25 chocolate wafer cookies (or Oreos), crushed

  • 2 large eggs
  • ⅓ cup unsweetened cocoa powder

For the Pudding Layer:

  • 2 cups whole milk
  • 3 egg yolks
  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons cocoa powder
  • 4 oz semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Whipped Topping:

  • 1 ½ cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • Cocoa powder or chocolate curls for garnish


Instructions

Prepare the Crust

  • Preheat oven to 350°F (175°C).
  • Combine crushed cookies with melted butter and salt.
  • Press into a 9-inch pie dish and bake for 10 minutes. Let cool completely.

Make the Fudgy Layer

  • In a saucepan, melt butter, then whisk in sugar, cocoa powder, and vanilla.
  • Cool slightly, add eggs, then stir in flour until combined.
  • Pour into cooled crust and bake 20–25 minutes. Cool completely.

Make the Pudding Layer

  • In a saucepan, whisk sugar, cocoa, cornstarch, and salt. Gradually add milk.
  • Cook over medium heat until thickened.
  • Add a little of the hot mixture to egg yolks, then return to pan.
  • Stir in chocolate, butter, and vanilla until smooth.
  • Pour over cooled layer. Chill for at least 3 hours.

Add the Whipped Cream Topping

  • Beat heavy cream and powdered sugar until soft peaks form.
  • Spread over chilled pie. Garnish with cocoa powder or chocolate curls.
