Description

A simple, wholesome Mediterranean-inspired casserole made with tender chicken, fresh zucchini, tomatoes, herbs, and melted mozzarella. Perfect for a light yet satisfying dinner.


Ingredients

  • 2 large zucchinis, sliced
  • 2 cups boneless, skinless chicken breasts, cubed
  • 1 cup cherry tomatoes, halved
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Add sliced zucchini, cherry tomatoes, and diced onion to the dish.
  3. Scatter cubed chicken over the vegetables.
  4. Drizzle with olive oil, then add garlic, Italian seasoning, salt, and pepper. Toss to coat.
  5. Bake for 20–25 minutes or until the chicken is cooked through.
  6. Sprinkle mozzarella on top and bake an additional 10 minutes until melted and golden.
  7. Rest for 5 minutes before serving.

Notes

  1. Slice zucchini thicker to prevent sogginess.
  2. Add feta for extra Mediterranean flavor.
  3. Substitute chicken with chickpeas for a vegetarian version.
  4. Squeeze fresh lemon over the top before serving for added brightness.
