Description
A simple, wholesome Mediterranean-inspired casserole made with tender chicken, fresh zucchini, tomatoes, herbs, and melted mozzarella. Perfect for a light yet satisfying dinner.
Ingredients
- 2 large zucchinis, sliced
- 2 cups boneless, skinless chicken breasts, cubed
- 1 cup cherry tomatoes, halved
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Add sliced zucchini, cherry tomatoes, and diced onion to the dish.
- Scatter cubed chicken over the vegetables.
- Drizzle with olive oil, then add garlic, Italian seasoning, salt, and pepper. Toss to coat.
- Bake for 20–25 minutes or until the chicken is cooked through.
- Sprinkle mozzarella on top and bake an additional 10 minutes until melted and golden.
- Rest for 5 minutes before serving.
Notes
- Slice zucchini thicker to prevent sogginess.
- Add feta for extra Mediterranean flavor.
- Substitute chicken with chickpeas for a vegetarian version.
- Squeeze fresh lemon over the top before serving for added brightness.
