Ingredients
- 8 slices bacon, diced
- 4 cups all-purpose flour
- 1 cup shredded extra-sharp cheddar cheese
- 4 teaspoons baking powder
- 1 1/2 teaspoons kosher salt
- 1 teaspoon baking soda
- 3/4 cup unsalted butter, frozen
- 1 1/2 cups cold buttermilk
- 6 tablespoons maple syrup, divided
- 2 tablespoons melted unsalted butter
Instructions
- Preheat oven to 425°F and line a baking sheet.
- Cook bacon until crisp; drain and cool.
- Whisk flour, baking powder, salt, and baking soda.
- Grate frozen butter into flour mixture and toss gently.
- Stir in cheddar and bacon.
- Mix buttermilk with 4 tablespoons maple syrup; add to dry ingredients and stir just until combined.
- Fold dough 2–3 times to create layers; pat to 1-inch thickness.
- Cut biscuits and place close together on baking sheet.
- Bake 15–18 minutes until golden brown.
- Brush warm biscuits with melted butter mixed with remaining maple syrup.
Notes
- Keep butter and buttermilk cold for maximum flakiness.
- Do not twist the biscuit cutter; press straight down for better rise.
- Place biscuits close together so they bake taller.
