Description

Ingredients

  • 8 slices bacon, diced
  • 4 cups all-purpose flour
  • 1 cup shredded extra-sharp cheddar cheese
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter, frozen
  • 1 1/2 cups cold buttermilk
  • 6 tablespoons maple syrup, divided
  • 2 tablespoons melted unsalted butter


Instructions

  1. Preheat oven to 425°F and line a baking sheet.
  2. Cook bacon until crisp; drain and cool.
  3. Whisk flour, baking powder, salt, and baking soda.
  4. Grate frozen butter into flour mixture and toss gently.
  5. Stir in cheddar and bacon.
  6. Mix buttermilk with 4 tablespoons maple syrup; add to dry ingredients and stir just until combined.
  7. Fold dough 2–3 times to create layers; pat to 1-inch thickness.
  8. Cut biscuits and place close together on baking sheet.
  9. Bake 15–18 minutes until golden brown.
  10. Brush warm biscuits with melted butter mixed with remaining maple syrup.

Notes

  • Keep butter and buttermilk cold for maximum flakiness.
  • Do not twist the biscuit cutter; press straight down for better rise.
  • Place biscuits close together so they bake taller.
