Ingredients
- 3 cups elbow noodles
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 1 1/2 cups low-sodium chicken broth
- 1 1/2 teaspoons salt
- 2 cups shredded cheddar cheese
- 1 serving Goldfish crackers (about 1/4 cup or more for topping)
Instructions
- Cook elbow noodles according to package directions and drain.
- In a saucepan, melt butter over medium heat. Add flour and cook for 1-2 minutes to create a roux.
- Gradually whisk in milk and chicken broth. Cook for 2-3 minutes until it thickens.
- Reduce heat to low and stir in shredded cheddar cheese until smooth. Add salt to taste.
- Stir in cooked noodles to coat with cheese sauce.
- Preheat oven to 375°F (190°C). Grease a muffin tin and fill each cup with mac and cheese.
- Crush Goldfish crackers and sprinkle on top of each cup.
- Bake for 15-18 minutes, until golden brown and crispy. Let cool before serving.
