Description

Mac and Cheese Cups offer a delicious, portable way to enjoy everyone’s favorite comfort food. Creamy, cheesy filling inside a crispy shell makes these baked cups irresistible and perfect for any occasion.


Ingredients

  • 3 cups elbow noodles
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups low-sodium chicken broth
  • 1 1/2 teaspoons salt
  • 2 cups shredded cheddar cheese
  • 1 serving Goldfish crackers (about 1/4 cup or more for topping)


Instructions

  1. Cook elbow noodles according to package directions and drain.
  2. In a saucepan, melt butter over medium heat. Add flour and cook for 1-2 minutes to create a roux.
  3. Gradually whisk in milk and chicken broth. Cook for 2-3 minutes until it thickens.
  4. Reduce heat to low and stir in shredded cheddar cheese until smooth. Add salt to taste.
  5. Stir in cooked noodles to coat with cheese sauce.
  6. Preheat oven to 375°F (190°C). Grease a muffin tin and fill each cup with mac and cheese.
  7. Crush Goldfish crackers and sprinkle on top of each cup.
  8. Bake for 15-18 minutes, until golden brown and crispy. Let cool before serving.

Notes

  • For extra flavor, add cooked bacon or sautéed vegetables to the cheese mixture.
  • Use a mix of cheeses like mozzarella or gouda for added richness.
