Ingredients
- 1 ½ cups all-purpose flour
- ½ cup cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp pumpkin pie spice
- 1 cup pumpkin puree (not pumpkin pie filling)
- ¾ cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil (or melted butter)
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, salt, and pumpkin pie spice.
- In a large bowl, whisk pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
- Gradually fold dry ingredients into wet ingredients until just combined. Do not overmix.
- Stir in half the chocolate chips, reserving some for the top.
- Spread batter evenly into prepared pan. Sprinkle remaining chocolate chips on top.
- Bake for 30–35 minutes or until a toothpick inserted comes out with moist crumbs.
- Cool completely before slicing into bars.
Notes
- For extra decadence, frost with cream cheese icing once cooled.
- Substitute nuts (walnuts or pecans) for chocolate chips if you want crunch.
- Don’t overbake—these bars should stay soft and fudgy.
