Ingredients
- 2 pounds baby yellow potatoes
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- ¾ cup shredded cheddar cheese
- ⅓ cup sour cream
- 4 slices bacon, diced
- 2 tablespoons chopped fresh chives
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil potatoes in salted water until tender, about 15-20 minutes. Drain.
- Place potatoes on baking sheet and gently smash with a masher or glass bottom.
- Drizzle olive oil over potatoes; season with salt and pepper.
- Roast 20 minutes until edges are golden and crispy.
- Top with cheddar cheese and bacon; roast 5-7 minutes more until cheese melts.
- Add sour cream and sprinkle chopped chives before serving.
