Description

Hearty russet potatoes stuffed with a creamy Cajun seafood filling, melted cheese, and topped with crispy, savory goodness.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat or seafood blend, chopped
  • 2 tablespoons unsalted butter
  • 1/2 cup whole milk or heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided (1 cup and 1½ cups)
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Sliced green onions or chopped parsley, optional (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean, prick them with a fork, and bake them directly on the oven rack or a baking sheet for 45-60 minutes until tender. Remove and cool slightly.
  2. While the potatoes bake, heat 2 tablespoons butter in a pan over medium heat. Add the chopped shrimp and crab meat, sautéing for 2-3 minutes. Add 1/2 cup milk or heavy cream, 1/2 cup sour cream, Cajun seasoning, garlic powder, paprika, and salt and pepper to taste. Stir until well combined.
  3. Scoop out the potato flesh from the baked potatoes, leaving a thin layer of potato inside the skin. Mash the potato flesh and mix with the seafood filling and 1 cup shredded cheddar cheese.
  4. Stuff the mashed seafood mixture into the potato skins. Sprinkle with the remaining 1½ cups shredded cheddar cheese.
  5. Bake stuffed potatoes at 350°F (175°C) for 10-12 minutes until cheese is melted and golden. Garnish with sliced green onions or chopped parsley before serving.

Notes

  • For extra crunch, top with extra crumbled bacon or panko breadcrumbs before baking.
  • Adjust the level of spiciness by adding more Cajun seasoning or a pinch of cayenne pepper.
