Ingredients

For the Casserole

  • 1 cup uncooked long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup finely diced yellow onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 24 boneless, skinless chicken breasts
  • 1 tablespoon olive oil or melted butter (optional, for brushing)
  • Paprika (optional, for color)


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine rice, chicken broth, cream of chicken soup, cream of mushroom soup, sour cream, onion, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Spread the rice mixture evenly into the prepared baking dish.
  4. Place chicken breasts on top. Brush with oil or butter if desired.
  5. Sprinkle with paprika for color.
  6. Cover tightly with aluminum foil and bake for 1 hour.
  7. Remove foil and bake an additional 15–20 minutes, until chicken is cooked through and rice is tender.
  8. Let rest for 5–10 minutes before serving.

Notes

  • Keep the foil tight so the rice steams properly.
  • If chicken breasts are thick, slice horizontally for even cooking.
  • Add frozen veggies like peas or broccoli to the rice mixture before baking.
  • For extra richness, sprinkle cheese on top during the last 10 minutes.
  • Use long-grain white rice only—other varieties won’t cook correctly.
