Ingredients
For the Casserole
- 1 cup uncooked long-grain white rice
- 2 cups low-sodium chicken broth
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1/2 cup sour cream
- 1/4 cup finely diced yellow onion
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 2–4 boneless, skinless chicken breasts
- 1 tablespoon olive oil or melted butter (optional, for brushing)
- Paprika (optional, for color)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a mixing bowl, combine rice, chicken broth, cream of chicken soup, cream of mushroom soup, sour cream, onion, garlic powder, onion powder, salt, and pepper. Mix well.
- Spread the rice mixture evenly into the prepared baking dish.
- Place chicken breasts on top. Brush with oil or butter if desired.
- Sprinkle with paprika for color.
- Cover tightly with aluminum foil and bake for 1 hour.
- Remove foil and bake an additional 15–20 minutes, until chicken is cooked through and rice is tender.
- Let rest for 5–10 minutes before serving.
Notes
- Keep the foil tight so the rice steams properly.
- If chicken breasts are thick, slice horizontally for even cooking.
- Add frozen veggies like peas or broccoli to the rice mixture before baking.
- For extra richness, sprinkle cheese on top during the last 10 minutes.
- Use long-grain white rice only—other varieties won’t cook correctly.
