These Keto Crispy Reuben Roll-Ups are made with melted Swiss cheese, tender corned beef, tangy sauerkraut, and a creamy homemade sauce—perfect for a low-carb snack or appetizer.
Ingredients
- 2 cups Shredded Swiss Cheese
- 1/2 pound Sliced Corned Beef Deli Meat
- 1 cup Sauerkraut
- 1/4 cup Mayonnaise
- 1 tsp Worcestershire Sauce
- 1 1/2 tbsp Sugar-Free Ketchup
- 2 tsp Swerve Confectioner’s Sugar Substitute
- 1 tbsp Horseradish Sauce
- 1 pinch Paprika
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Spread shredded Swiss cheese evenly in small mounds on the baking sheet. Bake for 5-7 minutes until golden brown.
- Once cheese is melted, cut it into rectangles. Layer corned beef and sauerkraut on top.
- In a small bowl, mix mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish, and paprika. Spread sauce over the fillings.
- Roll up the cheese rectangles carefully and secure with a toothpick.
- Bake for an additional 5-7 minutes, until crispy and bubbly.
