Description

These Keto Crispy Reuben Roll-Ups are made with melted Swiss cheese, tender corned beef, tangy sauerkraut, and a creamy homemade sauce—perfect for a low-carb snack or appetizer.


Ingredients

  • 2 cups Shredded Swiss Cheese
  • 1/2 pound Sliced Corned Beef Deli Meat
  • 1 cup Sauerkraut
  • 1/4 cup Mayonnaise
  • 1 tsp Worcestershire Sauce
  • 1 1/2 tbsp Sugar-Free Ketchup
  • 2 tsp Swerve Confectioner’s Sugar Substitute
  • 1 tbsp Horseradish Sauce
  • 1 pinch Paprika


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread shredded Swiss cheese evenly in small mounds on the baking sheet. Bake for 5-7 minutes until golden brown.
  3. Once cheese is melted, cut it into rectangles. Layer corned beef and sauerkraut on top.
  4. In a small bowl, mix mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve, horseradish, and paprika. Spread sauce over the fillings.
  5. Roll up the cheese rectangles carefully and secure with a toothpick.
  6. Bake for an additional 5-7 minutes, until crispy and bubbly.

Notes
