Description

Hot honey chicken sandwich with crispy cornflake crust and creamy Greek yogurt slaw makes a high protein dinner. Sweet, spicy, and perfect for weeknight meals.


Ingredients

  • 2 large chicken breasts (sliced into 4 cutlets)
  • 1 egg
  • 1 cup cornflakes, crushed
  • 1/2 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Olive oil spray
  • 1 bag coleslaw mix
  • 1 cup Greek yogurt
  • 2 tbsp avocado oil mayo
  • Juice of 1 lemon
  • 1 tsp parsley
  • 1 tsp dried chives
  • 1 tsp dried dill
  • 1 tsp onion powder
  • 1 tsp salt (or to taste)
  • Pickles
  • Hot honey
  • Buns or bread


Instructions

  1. Preheat oven to 400°F and prepare baking sheet.
  2. Season chicken and coat in egg, then seasoned cornflakes.
  3. Spray lightly with oil and bake 18–22 minutes until 165°F internally.
  4. Mix slaw dressing ingredients and toss with coleslaw mix.
  5. Toast buns, assemble with chicken, hot honey, slaw, and pickles.
