Description
Hot honey chicken sandwich with crispy cornflake crust and creamy Greek yogurt slaw makes a high protein dinner. Sweet, spicy, and perfect for weeknight meals.
Ingredients
- 2 large chicken breasts (sliced into 4 cutlets)
- 1 egg
- 1 cup cornflakes, crushed
- 1/2 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- Olive oil spray
- 1 bag coleslaw mix
- 1 cup Greek yogurt
- 2 tbsp avocado oil mayo
- Juice of 1 lemon
- 1 tsp parsley
- 1 tsp dried chives
- 1 tsp dried dill
- 1 tsp onion powder
- 1 tsp salt (or to taste)
- Pickles
- Hot honey
- Buns or bread
Instructions
- Preheat oven to 400°F and prepare baking sheet.
- Season chicken and coat in egg, then seasoned cornflakes.
- Spray lightly with oil and bake 18–22 minutes until 165°F internally.
- Mix slaw dressing ingredients and toss with coleslaw mix.
- Toast buns, assemble with chicken, hot honey, slaw, and pickles.
