Description

These Hot Chocolate Cookies are rich, chewy, and loaded with gooey marshmallows—everything you love about a cup of cocoa in cookie form. Perfect for winter baking and holiday cookie trays!


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup hot chocolate mix
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Optional Add-ins:

  • Crushed candy canes (for a peppermint twist)
  • Caramel drizzle
  • White chocolate chips or chunks


Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, hot chocolate mix, baking soda, and salt.
  3. Cream Butter and Sugars: In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  4. Add Egg and Vanilla: Mix in the egg and vanilla extract until combined.
  5. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until a thick dough forms.
  6. Fold in Chocolate Chips: Gently mix in the chocolate chips.
  7. Shape Cookies: Scoop 1½ tablespoons of dough and roll into balls. Place them 2 inches apart on prepared baking sheets.
  8. Bake: Bake for 8–9 minutes, until the edges are just set but centers are still soft.
  9. Add Marshmallows: Quickly remove the cookies from the oven and press 2–3 mini marshmallows on top of each cookie.
  10. Finish Baking: Return to the oven for 1–2 minutes until the marshmallows puff slightly.
  11. Cool and Serve: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm!

Notes

  • Don’t overbake! The cookies should be soft in the center for that perfect fudgy texture.
