Tender honey lime glazed chicken cubes served over fluffy white rice and topped with a fresh avocado, cilantro, and red onion mixture for a vibrant, satisfying meal.


Ingredients

For the Chicken:

  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 tbsp soy sauce
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • Salt and pepper to taste

For the Rice:

  • 1 cup white rice
  • 1 1/2 cups water
  • 1/4 tsp salt
  • 1 avocado, peeled and diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup red onion, diced
  • 1 lime wedge


Instructions

  1. In a bowl, whisk together the honey, lime juice, soy sauce, garlic, and ginger until combined.
  2. Add the chicken cubes to the marinade, tossing to coat. Let marinate for at least 15 minutes, or up to an hour in the refrigerator.
  3. Cook the rice with water and salt according to package directions until fluffy. Set aside.
  4. Heat a skillet or grill pan over medium-high heat and cook the marinated chicken cubes for 5-7 minutes, turning occasionally, until golden and cooked through.
  5. Pour any remaining marinade into the pan and cook for an additional 1-2 minutes until it thickens into a glaze.
  6. In a small bowl, gently combine the diced avocado, cilantro, and red onion. Squeeze a wedge of lime over the top.
  7. To assemble the stack, press rice into a cup or mold and invert onto a plate. Top with the glazed chicken and finish with the avocado mixture.
  8. Serve immediately while the chicken is warm and the avocado is fresh.
