Ingredients
- 1.5–2 pounds skirt steak
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 5 cloves garlic, finely minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons chopped fresh parsley or cilantro
Instructions
- In a medium bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, rice vinegar, sesame oil, black pepper, and red pepper flakes until well combined.
- Place the skirt steak in a resealable bag or shallow dish and pour the marinade over it. Coat evenly, cover, and refrigerate for 30 minutes to 4 hours.
- Preheat a grill to high heat and lightly oil the grates.
- Remove steak from the marinade and grill for 2–4 minutes per side, until nicely charred and cooked to medium-rare or medium.
- Transfer steak to a cutting board and rest for 5 minutes.
- Slice thinly against the grain and garnish with fresh parsley or cilantro before serving.
Notes
- Do not overcook skirt steak; it becomes tough if cooked too long.
- Always slice against the grain for the most tender texture.
- Flank steak can be used as a substitute if needed.
