Description

Deliciously sweet and perfectly caramelized Honey Cinnamon Roasted Sweet Potatoes — an easy, healthy side dish that’s full of flavor. Made with honey, cinnamon, and olive oil, this simple recipe is ideal for holidays or everyday dinners.

Ingredients

  • 2 lbs (about 4 medium) sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 2 tbsp honey (or maple syrup for vegan option)
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp black pepper (optional)

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare Sweet Potatoes: Peel and cut sweet potatoes into 1-inch cubes.
  3. Mix the Coating: In a large bowl, whisk together olive oil, honey, cinnamon, salt, and pepper until well combined.
  4. Toss to Coat: Add sweet potatoes to the bowl and toss until all cubes are evenly coated.
  5. Roast: Spread them in a single layer on the prepared baking sheet. Bake for 25–30 minutes, flipping halfway through, until golden brown and tender.
  6. Optional Glaze: Drizzle with extra honey right after removing from the oven for a glossy finish.
  7. Serve Warm: Enjoy as a side dish or mix into salads and grain bowls.

Notes

  • Don’t overcrowd the pan: Spread sweet potatoes evenly so they roast instead of steam.
  • Add crunch: Sprinkle chopped pecans or walnuts before roasting for a nutty twist.
  • Extra caramelization: Let them roast an extra 5 minutes for deeper flavor—but keep a close eye to avoid burning.
  • Vegan-friendly: Substitute honey with maple syrup or agave nectar.
  • Make ahead: Prep and coat potatoes the night before; roast fresh before serving.
