Ingredients

  • 1 lb chicken breasts (about 2 large breasts)
  • 3 tablespoons extra-virgin olive oil, divided
  • ⅓ cup breadcrumbs (whole wheat or unseasoned)
  • 3 tablespoons grated Parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Optional spices: Italian seasoning, dried oregano, dried thyme, paprika, garlic powder, cayenne pepper


Instructions

  1. Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Cut chicken breasts into bite-sized nugget pieces. Pat dry.
  3. Add chicken to a bowl and toss with 2 tablespoons olive oil.
  4. In a separate bowl, mix breadcrumbs, Parmesan, salt, pepper, and optional spices.
  5. Add chicken to breadcrumb mixture and coat evenly.
  6. Arrange nuggets on the baking sheet in a single layer.
  7. Drizzle with remaining 1 tablespoon olive oil.
  8. Bake for 12–15 minutes, flipping halfway through, until golden and cooked to 165°F (74°C).
  9. Cool slightly and serve warm with your favorite dips.
