Ingredients
- 1 lb chicken breasts (about 2 large breasts)
- 3 tablespoons extra-virgin olive oil, divided
- ⅓ cup breadcrumbs (whole wheat or unseasoned)
- 3 tablespoons grated Parmesan cheese
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Optional spices: Italian seasoning, dried oregano, dried thyme, paprika, garlic powder, cayenne pepper
Instructions
- Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Cut chicken breasts into bite-sized nugget pieces. Pat dry.
- Add chicken to a bowl and toss with 2 tablespoons olive oil.
- In a separate bowl, mix breadcrumbs, Parmesan, salt, pepper, and optional spices.
- Add chicken to breadcrumb mixture and coat evenly.
- Arrange nuggets on the baking sheet in a single layer.
- Drizzle with remaining 1 tablespoon olive oil.
- Bake for 12–15 minutes, flipping halfway through, until golden and cooked to 165°F (74°C).
- Cool slightly and serve warm with your favorite dips.
