Description

Healthy sloppy joes made with lean ground beef or turkey and simple homemade sauce are perfect for easy weeknight dinners. High protein and family friendly.


Ingredients

  • 2 lbs lean ground beef or ground turkey
  • 2 teaspoons avocado oil or olive oil
  • 1 small yellow onion, diced
  • 1 small bell pepper, diced
  • 3 garlic cloves, minced
  • 1 (6-ounce) can tomato paste
  • ¾ cup water
  • 2 tablespoons yellow or Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon paprika
  • ½ teaspoon fish sauce (or coconut aminos/tamari)
  • 12 teaspoons fine salt
  • ¼ teaspoon black pepper
  • Buns or baked sweet potatoes (optional)


Instructions

  1. Sauté onion and bell pepper in oil until softened.
  2. Add garlic and cook briefly.
  3. Brown ground meat; drain excess grease if needed.
  4. Stir in tomato paste and cook 1–2 minutes.
  5. Add water and remaining sauce ingredients.
  6. Simmer 8–10 minutes until thickened.
  7. Adjust seasoning and serve on buns or sweet potatoes.

Notes

  • Let tomato paste cook slightly for richer flavor.
  • Simmer uncovered to thicken sauce.
  • Taste before serving to balance salt and acidity.
