Description
Healthy sloppy joes made with lean ground beef or turkey and simple homemade sauce are perfect for easy weeknight dinners. High protein and family friendly.
Ingredients
- 2 lbs lean ground beef or ground turkey
- 2 teaspoons avocado oil or olive oil
- 1 small yellow onion, diced
- 1 small bell pepper, diced
- 3 garlic cloves, minced
- 1 (6-ounce) can tomato paste
- ¾ cup water
- 2 tablespoons yellow or Dijon mustard
- 1 tablespoon apple cider vinegar
- ½ teaspoon paprika
- ½ teaspoon fish sauce (or coconut aminos/tamari)
- 1–2 teaspoons fine salt
- ¼ teaspoon black pepper
- Buns or baked sweet potatoes (optional)
Instructions
- Sauté onion and bell pepper in oil until softened.
- Add garlic and cook briefly.
- Brown ground meat; drain excess grease if needed.
- Stir in tomato paste and cook 1–2 minutes.
- Add water and remaining sauce ingredients.
- Simmer 8–10 minutes until thickened.
- Adjust seasoning and serve on buns or sweet potatoes.
Notes
- Let tomato paste cook slightly for richer flavor.
- Simmer uncovered to thicken sauce.
- Taste before serving to balance salt and acidity.
- Freeze leftovers for quick future meals.
