A rich and creamy soup filled with chicken, pillowy gnocchi, vegetables, and herbs for a comforting one-pot meal.
Ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 yellow onion, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 pound potato gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon Italian seasoning
Instructions
- Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, and celery; cook until softened.
- Stir in garlic and cook for 1 minute. Sprinkle in flour and cook briefly.
- Slowly add chicken broth, stirring until smooth. Bring to a simmer.
- Add shredded chicken and seasonings. Simmer for 10 minutes.
- Stir in gnocchi and cook until tender (about 3–5 minutes).
- Add heavy cream and spinach, cooking until spinach wilts.
- Taste, adjust seasoning, and serve warm.
Notes
- Add extra broth if you prefer a thinner soup.
- Use rotisserie chicken for quicker prep.
- Add gnocchi last to keep them from getting too soft.
