Description

A rich and creamy soup filled with chicken, pillowy gnocchi, vegetables, and herbs for a comforting one-pot meal.


Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 yellow onion, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 pound potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon Italian seasoning


Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, and celery; cook until softened.
  2. Stir in garlic and cook for 1 minute. Sprinkle in flour and cook briefly.
  3. Slowly add chicken broth, stirring until smooth. Bring to a simmer.
  4. Add shredded chicken and seasonings. Simmer for 10 minutes.
  5. Stir in gnocchi and cook until tender (about 3–5 minutes).
  6. Add heavy cream and spinach, cooking until spinach wilts.
  7. Taste, adjust seasoning, and serve warm.

Notes

  • Add extra broth if you prefer a thinner soup.
  • Use rotisserie chicken for quicker prep.
  • Add gnocchi last to keep them from getting too soft.
